Cinnamon Sweet Potatoes

I’d like to share with you one of my favourite side dishes. It is so easy to make and tastes delicious… not to mention makes the house smell amazing! I love this as a side dish and not gonna lie, I’ve even eaten this dish left overs for a yummy breakfast too 😉 Its become one of my favourite comfort foods for a cold and dreary day.

It takes just 3 simple ingredients, all of which are rich in nutritional value, and only a few minutes to prepare. This is one recipe you have to try at least once, even if you don’t like sweet potatoes….this might change your mind! (*affiliate links)

Cinnamon Sweet Potatoes

3-4 sweet potatoes
Heaping spoon of Coconut oil
Ground Cinnamon

Preheat oven to 420 F

*Peel and dice the sweet potatoes
*Melt coconut oil (heaping spoonful, or enough just to coat the sweet potatoes)
*Toss in a mixing bowl so the oil coats the sweet potatoes
*Add cinnamon to taste
*Stir until sweet potatoes are evenly coated

*Place in a oven safe baking dish
*Bake for 15-20 minutes, until tender

Voila! Enjoy!

  1. Yum, we make sweet potatoes every week. I love them. They are amazing for anyone with gluten intolerance. I will have to try them with cinnamon.
